Chicken Tostadas - Dietitian's Choice Recipe

- 1 tbsp olive oil
- 1 pound chicken breast, cut into chunks or strips
- 1 tsp cumin
- 1 tsp garlic powder
- 2 tsp chili powder
- 1 cup frozen corn, thawed
- 1 red bell pepper, diced
- 1 cup lower-sodium black beans, drained
- 10 cups chopped Romaine lettuce
- 2 green onions, sliced
- 2 tomatoes, diced
- 1 ¼ cup shredded reduced-fat cheese
- 5 corn tortillas
- ½ cup fat-free sour cream mixed with 1 tsp taco seasoning

1.) Cook chicken breast in olive oil with cumin, garlic powder and chili powder until chicken is cooked through (no longer pink in the middle). 2.) Transfer chicken to a large bowl and add thawed corn, black beans, red bell pepper, green onions, tomatoes, lettuce and cheese. Toss to combine. 3.) Toast corn tortillas until lightly browned in a toaster oven or oven. 4.) Divide salad-chicken mixture evenly over corn tortillas and top with sour cream mixture. 5.)
