Bacon And Mushroom Frittata
6 eggs. 1 & 1 half cups, cream. salt and black pepper, to taste. 5 spring onions, chopped. 1 teaspoon, crushed garlic. 2 cups, sliced mushrooms. 2 tablespoons, chopped parsley. 2 cups, grated tasty cheese.
Method. 1, Beat eggs and cream, season generously with salt and pepper.
2, Heat a large non-stick pan. Spray with oil then cook bacon for 4 to 5 minutes.
3, add spring onion, garlic and mushrooms. Cook for 2 to 3 minutes stirring well. Add parsley and grated cheese and stir through.
4, Pour in the egg and cream mixture. Turn off heat and leave the pan on the element for 10 minutes.
5, The Frittata should now be quite firm and set. Finish off under a grill until cooked nicely.
