Garlic Mashed Potatoes Ingredients:
1 whole garlic bunch (with stem growing outwards) 1 tsp. olive oil 1 lb. Yukon-GoldĀ® potatoes or Red-New potatoes 1/4 tsp. salt 1/3 cup 2% milk 1 tsp. butter or margarine buttermilk Directions: Roast garlic by sliceing off bottom, place whole garlic in oven-proof skillet or pan, bottom-side-down, in 1 tsp. olive oil. When garlic has cooked so bottom has a golden-brown color, use point of a knife to remove cloves; place in a mixing bowl. Use about 4 cloves of garlic. Mash using a fork. Steam potatoes about 45 minutes, or until soft. Mash using a fork. Add 1 tsp. butter. Mix well. Add about 1/4 tsp. salt and milk to give it a creamier texture. (Add a splash of buttermilk for a tart flavor and rich texture if desored.) Mix in garlic ingredients. Continue mashing until ingredients are mixed thoroughly.
