Bennigan's Hot Bacon Dressing Ingredients:
2 oz. bacon grease 1/4 lb. red onion, diced finely 2 cups water 1/2 cup each honey, red wine vinegar 2 tbsp. Dijon mustard 1-1/2 tbsp. cornstarch 1 tbsp. Tabasco® sauce, optional Directions: Place bacon grease in a saucepan over medium-high heat. Add onions and sautè until onions start to blacken. While onions are carmelizing, in a mixing bowl place water, honey, pepper sauce and red wine vinegar. Using a wire whisk, mix ingredients well. Add cornstarch and whisk well. After onions have carmelized, add Dijon mustard to onions and stir with a rubber spatula. Add water, vinegar, pepper sauce, honey and cornstarch to mustard and onions and mix. Continue stirring until mix thickens and comes to a boil. Remove from heat and store in refigerator until needed. To reheat use a double boiler.
