Linguine with Fresh Tomato Sauce
1 pkg. (12 oz) uncooked linguine 4 large tomatoes, finely chopped 3 T. shredded fresh basil 1 t. olive oil 1/2 t. salt 1/4 t. freshly ground pepper 1 can (2.25 oz.) sliced ripe olives, drained 3/4 cup crumbled feta cheese
Cook linguine as package directs; drain and place in a large serving bowl. Combine tomatoes and next 4 ingredients. Toss gently. top linguine with tomato mixture and sprinkle with olives and feta cheese. This makes a great meatless main dish or a flavorful side. You'll love this quick, no cook sauce. Serves 6
